My second rotation was at the University of Maryland Dining Services in the South Campus Dining Hall. The overarching project that my partner and I completed was a compilation of our smaller projects in a bound booklet. Throughout our time at South Campus, Michelle and I created infographics with healthy tips, recipes, cooking tips, and meal plates. Each week we posted an infographic from each category on two billboard "Wellness Walls" for faculty and staff. One of the walls had each document translated into Spanish as well. Aside from the written work, Michelle and I also got to meet with many different employees throughout the operation and discuss their work. We met with wonderful people from areas of dining hall manager, chefs, purchasing and receiving, accounting, and Human Resources. We were amazed at just how expansive the operation is. On our final day of the rotation, we prepared and served a vegan menu to Sister Maureen, our preceptor, and some of the folks we met throughout our time there.
